veggies

wOOT!!  weekly harvest from our veggie garden. Tomato, pea pods, green beans, yellow squash, zucchini, cucumber, green bell peppers.

Not pictured are the carrots, orange bell peppers, beats, and red bell peppers.  Not bad pull today...and all from a 300 square foot garden :)

Betsy eats more veggies than I do, I like the squash and pea pods mostly, I can do without tomatoes, except on sandwiches.  She eats tomatoes like they are apples ;)

I can't eat tomatoes like that, but if you like eggs, you can cook the tomatoes in oil or butter with some onions, then throw in some beat up eggs and whatever seasoning you like (I just do pepper, salt, and a tiny bit of garlic powder) and that's one of my all time favorite breakfast meals ;)

great work!
I love caprese salad (tomatoes, basil and fresh mozzerella). The basil in my planters are growing really well (if I remember to water them), so I have been eating that quite often.

I also like to roast peppers and store them in balsamic vinegar for use in salads, pizza and pasta.

You could make some great pasta sauce with those tomatoes.
