Ok, so I'm sure this topic/question has been beaten to death, but it there some consensus on what the best oil is for my Passat (I've got the 2.8 motor and most, but not all, of my driving is "normal")?

5W40 or 0W40 are the recommended oil type for your engine.
Synthetic is better.  It's worth paying the $4.99 per quart vs. $2.99-$3.50 for the non-synthetic oil, IMO.

Because I change it often enough, I don't think any particular brand matters -- also your choices are very limited for 5W40 and 0W40.
